Vegan Carob Brownies

I was craving brownies last night, and I don’t eat chocolate so that means I have to make my own. These are yummy, vegan, and caffeine-free. Can brownies get any better? I don’t think so.

Ingredients

  • 1/4 cup vegetable oil
  • 1/4 cup applesauce
  • 1 cup turbinado sugar
  • egg replacer equal to 2 eggs
  • 1 tsp vanilla
  • 3/4 cup flour
  • 3/4 cup carob powder
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup vegan carob chips

Directions

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease a 9-inch square baking pan with coconut oil.
  • In medium bowl, stir together oil, applesauce, sugar, egg replacer, and vanilla.
  • In separate bowl, combine flour, carob, salt, and baking powder and stir together with wire whisk.
  • Gradually add dry ingredients to oil mixture and stir until well blended.
  • Stir in carob chips.
  • Spread batter into prepared pan and bake for 20 to 30 minutes.
  • Let cool, and eat!
