Crab and Spinach Stuffed Chicken Breasts
Stuffed dishes are always a wonderful treat because you always get a tasty surprise when you bite into them. Here's a stuffed chicken recipe with a non-traditional stuffing that I'm sure you'll enjoy.
- 1 6 oz package crabmeat
- 1 3 oz package cream cheese, softened
- 1/2 cup cooked, chopped spinach
- 1 tsp white pepper
- 1/2 tsp salt
- 1/2 tsp paprika
- 4 large skinless boneless chicken breasts
- 2 TBSP butter
- 1/4 cup milk
- breadcrumbs
- In a medium bowl, combine crabmeat, cream cheese, spinach, white pepper, salt, and paprika. Mix well.
- Place chicken breasts between 2 sheets of plastic wrap and beat with a mallet until flattened to 1/4 inch thickness.
- Spread 1/4 of crab mixture evenly onto each chicken breast and roll chicken breasts up.
- Secure with toothpicks.
- In large skillet, brown chicken in butter on all sides.
- Remove chicken to baking dish with milk in the bottom of it, sprinkle breadcrumbs on top, and cover with foil.
- Bake at 350 degree Fahrenheit for 10 to 15 minutes, or until chicken is done, and cheese is melted.
- Remove toothpicks, slice chicken, pour any remaining juices from baking over the chicken, top with a light dusting of breadcrumbs, and serve.
