Tamale Pie
Like tamales, but don't want to wait while you unwrap them? Try a tamale pie! They're just as good as tamales, but you don't have to unwrap them, and you can dish out a larger serving than what will fit in a cornhusk.
- 3/4 cup onions, chopped
- 2 TBSP olive oil
- 1 lb ground beef
- 1 can cream style corn
- 2 8 oz cans tomato sauce
- 4 tsp chili powder
- 1/2 tsp salt
- 3 eggs, beaten
- 1/2 cup milk
- 1 cup yellow corn meal
- In large skillet, Saute onions in olive oil.
- Add ground beef and cook until meat is browned.
- Add corn, tomato sauce, chili powder, and salt. Cook for 15 minutes.
- In small saucepan, mix eggs, milk, and corn meal and cook for 5 minutes.
- Place meat mixture in a casserole dish and top corn meal mixture.
- Bake at 350 degrees Fahrenheit for 35 minutes.
