Viking Meatball Soup

I'm not sure where this recipe came from, but I like the name of it. I also thought that it was an interesting way of making meatballs. I'd only heard of meatball sandwiches or spaghetti and meatballs before I came across this recipe.

  1. Combine all ingredients together EXCEPT for the beef stock and egg noodles. Mix well, and let stand in refrigerator for 2 hours or over night to blend flavors.
  2. Form meat mixture into 1 inch balls.
  3. Boil beef stock. Drop in meatballs and egg noodles.
  4. Cover and simmer for about 20 minutes, or until both meatballs and noodles are done.
