Viking Meatball Soup
I'm not sure where this recipe came from, but I like the name of it. I also thought that it was an interesting way of making meatballs. I'd only heard of meatball sandwiches or spaghetti and meatballs before I came across this recipe.
- 3/4 lb ground beef
- 1/4 lb ground pork
- 1 egg, beaten
- 1 cup milk
- 1 cup fine dry breadcrumbs
- 1/4 cup onion, chopped
- 1/4 tsp allspice
- salt and pepper to taste
- 2 1/2 quarts beef stock
- 1 bag of egg noodles
- Combine all ingredients together EXCEPT for the beef stock and egg noodles. Mix well, and let stand in refrigerator for 2 hours or over night to blend flavors.
- Form meat mixture into 1 inch balls.
- Boil beef stock. Drop in meatballs and egg noodles.
- Cover and simmer for about 20 minutes, or until both meatballs and noodles are done.
