ingredients:
1 6 oz. package crabmeat
1 3 oz. package cream cheese, softened
½ cup cooked, chopped spinach
1 tsp white pepper
½ tsp salt
½ tsp paprika
4 large skinless boneless chicken breasts
2 TBSP butter
¼ cup milk
breadcrumbs

In a medium bowl, combine crabmeat, cream cheese, spinach, white pepper, salt, and paprika. Mix well.

Place chicken breasts between 2 sheets of plastic wrap and beat with a mallet until flattened to ¼ inch thickness.

Spread ¼ of crab mixture evenly onto each chicken breast and roll chicken breasts up.

Secure with toothpicks.

In large skillet, brown chicken in butter on all sides.

Remove chicken to baking dish with milk in the bottom of it, sprinkle breadcrumbs on top, and cover with foil.

Bake at 350°F for 10 to 15 minutes, or until chicken is done, and cheese is melted.

Remove toothpicks, slice chicken, pour any remaining juices from baking over the chicken, top with a light dusting of breadcrumbs, and serve.
