ingredients:

¾ cup onions, chopped
2 TBSP olive oil
1 lb ground beef
1 can cream style corn
2 8-oz cans tomato sauce
4 tsp chili powder
½ tsp salt
3 eggs, beaten
½ cup milk
1 cup yellow corn meal


Like tamales, but don't want to wait while you unwrap them? Try a tamale pie! They're just as good as tamales, but you don't have to unwrap them, and you can dish out a larger serving than what will fit in a cornhusk.

In large skillet, Sauté onions in olive oil.

Add ground beef and cook until meat is browned.

Add corn, tomato sauce, chili powder, and salt. Cook for 15 minutes.

In small saucepan, mix eggs, milk, and corn meal and cook for 5 minutes.

Place meat mixture in a casserole dish and top corn meal mixture.

Bake at 350°F for 35 minutes.
