Dairy-Free Cinnamon Rolls
Warm, gooey cinnamon rolls with lots of icing and no dairy products! Since you have to wait for them to rise before you can bake them, they're not that quick to make, but they are easy, and well worth the wait.
- 1 package active dry yeast
- 1/2 cup warm water
- 1/2 tsp salt
- 2 TBSP dairy-free margarine, softened
- 1 egg, beaten
- 3 TBSP granulated sugar
- 2 1/2 cups flour
- 1/2 cup milk-free margarine, melted
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 TBSP cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger powder
- 1 cup powdered sugar
- 1 TBSP maple syrup
- 1 TBSP non-dairy creamer
- Dissolve yeast in warm water.
- Add salt, softened margarine, egg, and 3 TBSP sugar. Mix well.
- Add in flour a little at a time and form a soft dough.
- Turn dough out onto a floured board and knead for 2 minutes.
- Roll dough out into a 9x18 inch rectangle.
- In a medium bowl, combine sugars, cinnamon, nutmeg, and ginger powder.
- Brush dough with melted margarine and sprinkle with cinnamon mixture.
- Roll up into a roll, seal, and cut into 1 1/2 inch slices.
- Place slices in a greased 8-inch round pan, cover, and let rise for 30 minutes.
- Uncover rolls and bake in a 375 degree Fahrenheit oven for 30 to 35 minutes.
- Mix powdered sugar, maple syrup, and non-dairy creamer into a smooth paste and spread over top of warm cinnamon rolls.
