Dairy-Free Almond Jello
True, most Jellos don't have milk in them anyway, but Almond Jello usually does. Since I know several people who either choose to avoid dairy products, or they simply can't have them, I came up with this dairy-free alternative.
- 1 cup hot water
- 1/4 cup sugar
- 1 cup rice milk
- 2 packages unflavored gelatin
- 3 TBSP cold water
- 1 tsp almond extract
- 1 can of your favorite fruit in syrup (optional)
- Mix gelatin with cold water and stir until gelatin is completely dissolved.
- Add hot water and stir.
- Stir in rice milk, almond extract, and sugar.
- Pour into shallow sheet cake pan and refrigerate.
- When set, cut into squares and add desired fruit with syrup.
