Dairy-Free Lemon Squares
When you can't have dairy products, it's hard to find baked goods that you can have, since most bakery items have milk, or butter, or both in them. Here's a great lemon square recipe without any dairy, and it's just as gooey and yummy as the original.
- 1 cup flour
- 1/2 cup dairy-free margarine
- 1/4 cup powdered sugar
- 2 eggs
- 1 cup sugar
- 2 TBSP lemon juice
- 1/2 tsp baking powder
- Preheat oven to 350 degrees Fahrenheit.
- Cut together flour, margarine and powdered sugar.
- Spread flour mixture evenly over the bottom of an 8x8x2 baking pan and bake for 20 minutes.
- Combine eggs, sugar, lemon juice and baking powder, and pour over crust.
- Bake for an additional 20 minutes.
- Cut into squares when cool and serve.
