Dairy-Free Rice Pudding
When you can't have dairy products, it can be difficult to find creamy desserts that you can eat like pudding. This rice pudding recipe is so rich and creamy, that you'd never know that it didn't have any dairy products in it unless you made it yourself or someone told you. It is a little time consuming, but well worth the effort.
- 1/2 cup rice, uncooked
- 3/4 cup water
- 1 quart vanilla rice milk
- 4 egg yolks
- 3/4 cup sugar
- 1 tsp vanilla
- 1 tsp lemon zest
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Boil rice in water for 5 minutes. Drain.
- In large saucepan, heat up rice milk.
- Add rice and cook on low heat for 45 minutes, then remove from stove.
- Beat egg yolks together with sugar, then stir into rice mixture a little at a time while stirring constantly.
- Add remaining ingredients and mix well.
- Return to stove, on low heat, and stir until thick.
- Chill, and serve.
