Almond Jello
Creamy, light gelatin with a hint of almond flavor served with fruit is a great way to cool off in the summertime. This is a popular dessert at Chinese Restaurants served with fruit cocktail, but you can use any fruit that you like or even eat it plain. My Mom got this recipe from a friend when we lived in California, and it's a household favorite.
- 1 cup hot water
- 1/4 cup sugar
- 1 cup milk
- 2 packages unflavored gelatin
- 3 TBSP cold water
- 1 tsp almond extract
- 1 can of your favorite fruit in syrup (optional)
- Mix gelatin with cold water and stir until gelatin is completely dissolved.
- Add hot water and stir.
- Stir in milk,almond extract, and sugar.
- Pour into shallow sheet cake pan and put in fridge.
- When set, cut into squares and add desired fruit with syrup.
