Potato Soup

Potato soup is a great comfort food for me, especially when served with a big slice of fresh cornbread. It's a nice light soup that isn't very spicy. My Mom always made this soup for me when I wasn't feeling well growing up, and it always helped me feel at least a little better.

  1. Boil potatoes in water with salt, pepper, and butter until potatoes are tender.
  2. Mash potatoes with a potato masher into small chunks (for creamier soup, use a hand blender).
  3. Add milk and parsley.
  4. Mix well and serve.
