Potato Soup
Potato soup is a great comfort food for me, especially when served with a big slice of fresh cornbread. It's a nice light soup that isn't very spicy. My Mom always made this soup for me when I wasn't feeling well growing up, and it always helped me feel at least a little better.
- 2 1/2 lbs, or about 8 medium potatoes
- 2 1/2 cups water (or just enough to barely cover potatoes)
- 1 tsp salt
- 1/2 tsp white pepper
- 2 TBSP butter
- 1/2 cup milk
- 1 TBSP dried parsley flakes, crushed
- Boil potatoes in water with salt, pepper, and butter until potatoes are tender.
- Mash potatoes with a potato masher into small chunks (for creamier soup, use a hand blender).
- Add milk and parsley.
- Mix well and serve.
