Veggie Loaf
Here's a great tasting alternative to classic meatloaf for vegetarians, or for people looking for a healthier version. It makes a yummy main dish for dinner, and leftovers are great in a sandwich.
- 1 cup tvp
- 1 cup warm water
- 1/2 cup grated raw potatoes
- 1/2 cup grated raw carrots
- 1/2 cup canned peas, drained
- 2 eggs, beaten
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp seasoned salt
- Mix tvp with water in a large bowl, and let set until liquid is absorbed.
- Add remaining ingredients and mix well.
- Place mixture in a loaf pan and bake at 375 degrees Fahrenheit for 30 to 45 minutes, or until done.
