ingredients:

2½ lbs, or about
8 medium potatoes
2½ cups water
(or just enough to barely
cover potatoes)
1 tsp salt
½ tsp white pepper
2 TBSP butter
½ cup milk
1 TBSP dried parsley
flakes, crushed


Potato soup is a great comfort food for me, especially when served with a big slice of fresh cornbread. It's a nice light soup that isn't very spicy. My Mom always made this soup for me when I wasn't feeling well growing up, and it always helped me feel at least a little better.

Boil potatoes in water with salt, pepper, and butter until potatoes are tender.

Mash potatoes with a potato masher into small chunks (for creamier soup, use a hand blender).

Add milk and parsley.

Mix well and serve.
