Lentil Soup
This is a good hearty soup that's great to warm up to on a cold winter day. I recommend making this soup in a crock pot. Put it on before you leave in the morning, and you'll have dinner waiting for you when you get home.
- 1 lb lentils
- 1 large onion, chopped
- 2 carrots, sliced
- 3 tomatoes, diced
- 3 stalks celery, chopped
- 2 sprigs fresh parsley, finely chopped
- 2 bay leaves
- salt and pepper to taste
- Soak lentils overnight.
- Drain lentils and put in large pan and cover with twice as much water as lentils.
- Add onion, carrots, tomatoes, celery, parsley, bay leaves, and salt and pepper.
- Cook on medium heat until lentils are soft (about 1 to 2 hours).
- Remove bay leaves and serve.
