Vegan Brownies
Vegan baked goods are hard to come by, and when you find them, they're usually expensive. So, here's a gooey vegan brownie recipe that's yummy and inexpensive.
- 1/2 cup vegetable oil
- 1 cup sugar
- 1/2 cup prune puree
- 1 tsp baking powder
- 1 tsp vanilla
- 1/2 cup flour
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 cup walnuts, chopped (optional)
- powdered sugar
- Preheat oven to 350 degrees Fahrenheit.
- Spray 9-inch square baking pan with cooking spray.
- In medium bowl, stir together oil, sugar, and vanilla.
- Mix prune puree with 1 tsp. baking powder and add to oil mixture and mix well.
- In separate bowl, combine flour, cocoa, salt, and 1/2 tsp baking powder. Stir together with wire whisk. Gradually add to oil mixture and stir until well blended.
- Stir in chopped nuts, if using.
- Spread batter into prepared pan and bake for 20 to 30 minutes.
- Let cool, and sprinkle with powdered sugar.
