Vegan Eggplant Dip
Going to a party and don't know what to take? Here's a dip with a different twist to it, eggplant. And, since it's vegan, everyone will be able to enjoy some. I recommend serving it with plain tortilla chips or pita bread.
- 1 eggplant
- 1 clove garlic, mashed
- 1 red onion, grated
- 1 TBSP parsley, chopped
- 1 tsp Oregano
- Olive Oil
- Bake eggplant at 350 degrees Fahrenheit for 1 hour.
- Remove skin from eggplant.
- Place 1 TBSP of oil in blender or food processor.
- Add eggplant, garlic, onion, parsley, and oregano. Blend.
- Add olive oil to desired consistency.
- Chill and serve.
