Vegan Eggplant Dip

Going to a party and don't know what to take? Here's a dip with a different twist to it, eggplant. And, since it's vegan, everyone will be able to enjoy some. I recommend serving it with plain tortilla chips or pita bread.

  1. Bake eggplant at 350 degrees Fahrenheit for 1 hour.
  2. Remove skin from eggplant.
  3. Place 1 TBSP of oil in blender or food processor.
  4. Add eggplant, garlic, onion, parsley, and oregano. Blend.
  5. Add olive oil to desired consistency.
  6. Chill and serve.
