Vegan Tamale Pie
It's hard to find vegan tamales, unless you make them yourself, but they're a lot of work. Here's a recipe for a vegan tamale pie that's easy to make, you don't have to unwrap it before you eat it, and it makes enough to share with friends.
- 3/4 cup onions, chopped
- 2 TBSP olive oil
- 1 cup cooked rice
- 1 can chili beans, with liquid
- 1 can corn, drained
- 2 8-oz cans tomato sauce
- 4 tsp chili powder
- 1/2 tsp salt
- 1 tube prepared polenta
- In large skillet, sauté onions in olive oil.
- Add rice, beans, corn, tomato sauce, chili powder, and salt. Simmer for 15 minutes.
- Place rice mixture in a casserole dish and top with flattened polenta.
- Bake at 350 degrees Fahrenheit for 30 minutes.
