ingredients:

½ cup vegetable oil
1 cup sugar
½ cup prune puree
1 tsp. baking powder
1 tsp vanilla
½ cup flour
1 cup carob powder
¼ tsp salt
½ tsp baking powder
½ cup walnuts,
chopped (optional)
powdered sugar


I have a few friends who are vegans, and I avoid caffeine, so here's a brownie recipe that we can all enjoy! It's very yummy, vegan, and caffeine free.

Preheat oven to 350°F.

Spray 9-inch square baking pan with cooking spray.

In medium bowl, stir together oil, sugar, and vanilla.

Mix prune puree with 1 tsp baking powder and add to oil mixture and mix well.

In separate bowl, combine flour, carob, salt, and ½ tsp baking powder. Stir together with wire whisk. Gradually add to oil mixture and stir until well blended.

Stir in chopped nuts, if using.

Spread batter into prepared pan and bake for 20 to 30 minutes.

Let cool, and sprinkle with powdered sugar.
