ingredients:

1 eggplant
1 clove garlic, mashed
1 red onion, grated
1 TBSP parsley, chopped
1 tsp. Oregano
Olive Oil


Going to a party and don't know what to take? Here's a dip with a different twist to it, eggplant. And, since it's vegan, everyone will be able to enjoy some. I recommend serving it with plain tortilla chips or pita bread.

Bake eggplant at 350°F for 1 hour.

Remove skin from eggplant.

Place 1 TBSP of oil in blender or food processor.

Add eggplant, garlic, onion, parsley, and oregano. Blend.

Add olive oil to desired consistency.

Chill and serve.
