ingredients:
2¼ cups flour
1 cup quick oats
½ tsp baking soda
¼ tsp salt
¼ tsp nutmeg
1 tsp cinnamon
1 medium banana
2 tsp baking powder
1 cup brown sugar (packed)
½ cup granulated sugar
1 cup dairy-free margarine (softened)
2 tsp vanilla extract
2 TBSP pure maple syrup
1 package baking raisins

Baking nice soft, chewy cookies without any dairy or eggs is quite a challenge. I think I've come up with a yummy recipe though. |

Preheat oven to 300°F.

In medium bowl, combine flour, oats, baking soda, salt, nutmeg and cinnamon. Mix well, and set aside.

Mash banana well, add baking powder to banana mixture and mix well. This should form a foamy mixture.

In large bowl, blend sugars and margarine to form a grainy paste.

Add vanilla, maple syrup and banana mixture; mix until all ingredients are incorporated.

Add flour mixture and raisins. Mix until just combined.

Drop by rounded Tablespoons onto ungreased cookie sheets about 2 inches apart.

Bake for 15 to 20 minutes, or until cookies are a light golden brown color.

Transfer cookies to wire racks to cool.
