ingredients:

2½ lbs, or about
8 medium potatoes
2½ cups water
(or just enough to barely
cover potatoes)
1 tsp salt
½ tsp white pepper
2 TBSP dairy-free margarine
½ cup soy milk
1 TBSP dried parsley
flakes, crushed


This is a good soup to make if you get home late and want a quick dinner. It only takes about a half an hour to make, and the ingredients are pretty common, so you probably won't have to go make a special shopping trip if you want to make it. It also makes a nice light lunch if you have any leftovers.

Boil potatoes in water with salt, pepper, and margarine until potatoes are tender.

Mash potatoes with a potato masher into small chunks (for creamier soup, use a hand blender).

Add soy milk and parsley.

Mix well and serve.
