ingredients:

¾ cup onions, chopped
2 TBSP olive oil
1 cup cooked rice
1 can chili beans, with liquid
1 can corn, drained
2 8-oz cans tomato sauce
4 tsp chili powder
½ tsp salt
1 tube prepared polenta


It's hard to find vegan tamales, unless you make them yourself, but they're a lot of work. Here's a recipe for a vegan tamale pie that's easy to make, you don't have to unwrap it before you eat it, and it makes enough to share with friends.

In large skillet, sauté onions in olive oil.

Add rice, beans, corn, tomato sauce, chili powder, and salt. Simmer for 15 minutes.

Place rice mixture in a casserole dish and top with flattened polenta.

Bake at 350°F for 30 minutes.
