ingredients:
¾ cup onions, chopped
2 TBSP olive oil
1 cup cooked rice
1 can chili beans, with liquid
1 can corn, drained
2 8-oz cans tomato sauce
4 tsp chili powder
½ tsp salt
1 tube prepared polenta

It's hard to find vegan tamales, unless you make them yourself, but they're a lot of work. Here's a recipe for a vegan tamale pie that's easy to make, you don't have to unwrap it before you eat it, and it makes enough to share with friends. |

Add rice, beans, corn, tomato sauce, chili powder, and salt. Simmer for 15 minutes.
